A Visit to Kokiri Korean Bistro in Edinburg: Flavorful, Comforting and Worth Sharing

Edinburg has plenty of great food spots, but Kokiri Korean Bistro quickly earns a place on the must-try list. I recently stopped by for dinner with my family and am already planning my next visit.

What We Ordered

Tteokbokki with Cheese

We kicked things off with the rose tteokbokki with cheese, a rich, creamy version of the classic Korean rice cakes. It had little kick and was served piping hot and fresh. This dish really set the tone for the rest of our meal.

Kimchi Beef Tofu Stew and White Rice

For the main course, I ordered the kimchi beef tofu stew. It arrived to our table bubbling hot in a stone pot and was full of bold, comforting flavors and generous portions of soft tofu and pieces of beef.

Jajangmyeon (Black Bean Noodles)

My wife had the jajangmyeon (black bean noodles), which had a deep, savory flavor and chewy noodles that held up well with the sauce.

Side Dishes that Steal the Show

Before anything hits the table, we were served an assortment of Korean banchan. These are small side dishes that comes with every meal and at Kokiri, they bring them out first, and they offer unlimited refills, which we thought was a great touch. The spread included:

  • Fish Cakes
  • Squid in a spicy sauce
  • Classic Kimchi
  • Jalapeños in a soy vinaigrette
  • Tofu in a chili-baste sauce / paste
  • Sweet white shaved pickled radish

Each one was fresh, flavorful, and brought a unique element to the table. Having these served right away gave us a chance to nibble while waiting for our mains, and the option to refill them made the meal feel generous and well-paced.

Atmosphere & Service

The restaurant had a laid-back and welcoming atmosphere. The staff were very kind, attentive, and made sure we had everything we needed without being intrusive. The whole experience was warm and easygoing.
